Mark Rosenstein, Asheville, The Market Place, owner/chef, is creating a variation of coq au vin this morning when I meet him in the kitchen of his restaurant.  He swiftly debones quality chicken – free range and hormone free while describing to me his philosophy of food and dining.  Mark is working on some new menus for The Market Place this morning.

After 25 years, the fresh, local ingredients, in season, becomes his delicious source of inspiration.  At The Market Place, Mark creates menus of quality and is committed to also creating value for his clients.

Today his beautiful, seasonal ingredients are raspberries and mushrooms brought to him from a local gatherer.
